Ingredients
500g carrots500 g celery
500 g onion
500 g salt
1 clove garlic
1 bunch of parsley and basil
Preparation
It's not a cube, really, but it has the same use. It's very simple, it just takes a little' free time but it's worth it.Cut all the vegetables, preferably organic, very finely, better with a chopper without adding anything.
Cover with salt and put them to cook light without adding anything (even water). The salt will extract water from vegetables; simmer a few hours until this water has completely dried. Put in jars while hot, close and turn the jars upside down.
With the same proportions can be done with meat.
You can keep it for months in the refrigerator thanks to the great amount of salt.
It is enough to place a teaspoon of it to flavor soups, sauces and meat dishes. Do not overdo the quantity.
